Bronze drawing is one of the defining techniques of traditional Italian pasta making. By passing the dough through bronze dies, the pasta develops a naturally rough, porous surface full of character.

This rough texture is far more than a visual feature. It allows the pasta to hold sugos more effectively, capture every seasoning and deliver a richer, more authentic eating experience.

Compared with faster industrial processes, bronze drawing requires more time, greater care and exceptional raw ingredients. Every pasta shape develops its own natural, irregular texture, designed to highlight the flavour of the wheat and its connection to Mediterranean cuisine.
