For more than a thousand years, the salt pans of Margherita di Savoia have been among the most precious symbols of Italy’s salt-making tradition. Stretching for over twenty kilometres along the Adriatic coast of Puglia, they are the largest marine salt pans in Europe and continue to produce exceptional sea salt to this day.

The salt is created through a completely natural process. Seawater flows slowly into the evaporation ponds, where the sun and wind of Puglia do the rest. Day after day, the water evaporates, leaving behind pure crystals formed entirely by the forces of nature.

Every crystal differs slightly in shape and size, reflecting a process that cannot be standardised. It is precisely this natural uniqueness that makes the sea salt of Margherita di Savoia so authentic and highly valued in Mediterranean cuisine.
